Vegan Cheesecake

Ingredients
  

Crust

  • 280 g flour
  • 60 g sugar
  • 1 tsp baking powder
  • 3 tbsp soy milk
  • 1 pinch salt
  • 140 g vegan butter cold

Filling

  • 800 g soy skyr
  • 400 g cashew yoghurt or soy yoghurt
  • 65 g corn starch
  • 2 tbsp almond flour
  • 1 pinch kala Namak
  • 80 g vegan butter soft
  • 129 g sugar
  • 1 lemon juice and zest optional

Instructions
 

  • Preheat the oven for 180°C/360°F

Crust

  • Combine all ingredients
  • Crease a cake pan and spread the dough

Filling

  • Mix all ingredients smoothly
  • Fill it in the cake pan
  • Bake for 50-60 minutes
