Preparation:

Start by bringing a large pot of salted water to a boil and cooking your pasta of choice until al dente. While the pasta works its magic, sauté finely chopped onions in a skillet until they’re soft and translucent. Then, pour in your vegan cream of choice, you can use self-made like I show in my vegan cream recipe or use store bought. Finally sprinkle in some nutritional yeast flakes for that cheesy, savory kick. Let the sauce simmer until it thickens slightly, and season it with salt and pepper to taste.

Once your pasta is cooked to perfection, toss it into the skillet with the creamy sauce. Give everything a good mix until the pasta is evenly coated, adding a splash of reserved pasta water if needed to loosen up the sauce.

Vegan Creamy Pasta

Ingredients
  

  • 200 g noodles
  • 250 ml vegan cream self-made or store bought
  • 1 onion
  • 4 tbsp nutritional yeast
  • 1 tbsp olive oil
  • pepper
  • salt
  • chili powder for some heat

Instructions
 

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
  • Sauté the Onions: While the pasta is cooking, heat a bit of olive oil in a large skillet over medium heat. Add the chopped onions and sauté until soft and translucent, about 5 minutes.
  • Make the Creamy Sauce: Once the onions are cooked, pour in the vegan cream and sprinkle in the nutritional yeast flakes. Stir well to combine and let the sauce simmer for a couple of minutes until it thickens slightly. Season with salt and pepper to taste.
  • Combine Everything: Add the cooked pasta to the skillet with the creamy sauce. Toss everything together until the pasta is evenly coated with the sauce. If the sauce is too thick, you can loosen it up with a bit of pasta water.
